I use Openwrt every day thank you it's a very good job.
From time to time there are major releases that come out and they need to be installed (25.12.x).
But once installed openwrt also tells me that I have packages to update.
Is it advisable to update them?
If not, why?

Upgrading packages (via the CLI opkg upgrade/apk upgrade commands or the LuCI Upgrade... button) can result in major problems. It is generally highly discouraged, unless you know what you are doing or if there is specific instruction to do so.

I just updated all the packages but nothing seems broken.
Is it advisable to put back an old backup or should I leave it like that and wait for the next big update 25.12.x?

some issues might appear post boot.
you can always reset or use OWUT to get back to where you were, by doing an upgrade to the same version you were already on.
