I put the MT6000 in AP mode and installed bridger for hw offload. I am still new to openwrt x86 but is this good for cake/layer_cake on an intel N100 connected directly to the fiber ONT (TDS Telecom)?

I'm not sure you're asking a question or this is a humble brag lol. Yes, if your connection is rated at 1Gbps symmetrical then those are great results. Download could be a little higher maybe.
Try upgrading to 24.10.0-rc2, they moved to a tickless kernel for x86, you might get slightly better results on the N100 with it or at least some power savings.
Btw GL-MT6000 will do up to about 900Mbps with sqm cake (as with most Filogic 830 targets). N100 should do it without breaking a sweat.
