i would like to start a topic regarding upgrading the new OpenWrt one. Please post your findings, that could possibly (!) work with the M.2 M-Key Slot. The intention was probably to insert SSDs into the M.2 slot, but there are much more possibilities!
It's a single PCIe 2.0 lane which provides 500 MB/s bandwidth. That is sufficient for exactly four 1 Gbit/s LAN ports or (almost) two 2.5 GBase-T ports.
For anyone who is able to 3D print his own case, this 5 GBase-T card might be a fit.
However, keep in mind that a 5 GBit/s is equal to 625 MByte/s. But the M.2 slot is limited to 500 MByte/s. That means, you would lose 20% bandwidth.
Yes, there's also a quad port gigabit Ethernet M.2 card. But this one is also too long to fit the screw standoffs, which are located on the OpenWrt One PCB. That means, you would have to 3D print yourself a custom case for the OpenWrt One.
And here we have a Dual 2.5G M.2 card. Again: you would have to 3D print his own case.
