Do mirrors exist for the wiki, or is there a way to get the (latest) wiki content in a offline way? Part of the reason why i am asking is because the wiki itself is unusable for me today, its most of the time not loading. The forum and other sites seams to work fine around the project, just the wiki not.

Yeah, there does not seam a simple way, really unfortunate. I would be even fine with a pdf that contains everything. So if the wiki is down there is really no other way, i could not find any repository's that indicate how the wiki is build, so it seams its just run as a single services with no failover.
You might be able to find specific pages on waybackmachine: e.g. https://web.archive.org/web/20250401135658/https://openwrt.org/docs/guide-user/start
That is always hit and miss though. And archive.org tends to be fairly slow.
