Could I get help setting up a mesh network to replace my Deco crap system? I have 5 routers.

FYI, be careful of offering to pay for services here in the official forum (i.e., where we all generally volunteer to support one another). You solicitation may have unwanted effects.
I'm sure users will be able to assist you, nonetheless in any case, you'll need to expound on:
- What are the make/model of the 5 devices you have
- Are they all compatible with and running OpenWrt
- If so, what version of OpenWrt
- Have you already attempted to follow OpenWrt documentation/forums to setup your devices
- If so, what issue(s) did you experience

What do you mean by a mesh network?
Give your answer, then read this and then, depending on whether your answer is still the same or not, we will know how to advise you.
Since you've already got five OpenWrt One routers and don't want to configure everything manually, you might find the WrtNova fleet builder useful. It generates stock OpenWrt images (using the official ASU builder) from a browser-based configuration for multi-node deployments, including VLANs, guest/IoT isolation, WireGuard client, fast roaming, 802.11s mesh, and other network settings.
It can save you a lot of manual setup time.

If you really do mean a mesh network (802.11s), for your 5 nodes you would be advised to use the Mesh11sd package for a reliable backhaul.
If you only wanted a simple two meshnodes you could use the static OpenWrt wireless config method. This will not work reliably with five nodes.
Although WrtNova looks very useful, for a Mesh11sd rollout, I would not recommend it at this stage, because Mesh11sd is a dynamic runtime configuration and management daemon for mesh networks - WrtNova, as a static pre-flash configuration tool will not understand this. I'm not saying it cannot be used, but I would expect problems...
Mesh11sd has its own Rapid Deployment Firmware Flash method for roll out, should it be a mesh you are actually wanting!
@jim2 There's a batman-adv option to run it on top of 802.11s if you have problem with multi-hop on 802.11s
