Sure, although users should always be able to upgrade to a FW with a higher compatibility level. So upgrading to OpenWrt shouldn't be an issue, even for older stock FW versions.
Reverting to stock will also remain possible (to any stock version). Upgrading from stock afterwards will come with the same restrictions again: minimum compatibility level of the new image needs to be 2 (so OpenWrt or stock version 5.1.0+).
