I found some suggestion to edit /usr/share/ucode/luci/dispatcher.uc and remove the user mentioned there, but is there a better way through Luci itself and more specifically, is there a way to make it persistent between system updates?

Set the edited file to be included in sysupgrade.
That would be quite likely to explode between (at least-) major release upgrades.
Yeah, that doesn't sound like a good idea since Luci stock config files can change.
It it's not possible yet, it looks like this should be externalized into some extra user configuration file that's doesn't need to change with sysupgrade.
