Any benefits to upgrading dumb AP?

Hi, I have a Netgear R7800 still running on OpenWrt 19.07.x as a dumb AP.

What are compelling reasons to upgrade this device to 21.02.0, considering it's rock stable, doesn't do much, and can't be managed directly via ssh or Luci?

If it's not facing the internet, I would argue that there's no immediate need to update. 21.02 brought significant usability, performance and security improvements ... and as far as I can see none of those really matter if your AP is not an edge router, especially since 19.07 and more especially one of the later 19.07 releases are not horriffically outdated.

If it ain't broken, don't fix it.

That's what I say. But usually if it isn't broken, I'll fix it until it is.

WPA3 support is the main 21.02 feature you might want on an AP. Apart from that, I don't think there is much.

There is ongoing and continued maintenance for 21.02.x, while 19.07.x is pretty much EoL by now - and that shouldn't be underestimated.
