Will the Alfa Hornet-UB x2 ever be supported in OpenWrt 21.02.1?

This device has 8MB flash and 64MB of RAM (unlike the Hornet-UB) so I think it meets the requirements for 21.02.1.

Was this overlooked or is it just not going to be supported anymore?

This device is currently ar71xx only. Nobody has ported it to ath79 yet.
That's the reason why there is no 21.02 is available for this device.

The answer to your question in the topic title is: Most probably no.
