I have this and its rooted. Is there a way to put a full openwrt on it or to upgrade parts to install the usb drivers for a 2.5gb adapter?

no. Your device is not supported by the official OpenWrt project.
…and it's pretty much guaranteed to be unsupportable/ never going to be supported (hello Broadcom).
