I'm considering purchasing an MT6000 and have a few questions before making a decision. If I understand correctly, this device comes with a fork of OpenWRT preinstalled, and I've read that to install the official OpenWRT, I need to use the sysupgrade image instead of the factory image.
Here are my questions:
Will flashing the sysupgrade image remove the entire stock OS, similar to flashing a factory image file on other devices?
Is LuCI installed by default when flashing the sysupgrade image?
Are there any drawbacks to buying devices that require using sysupgrade?
I'm currently using an R7800, which has been trouble-free for years. Can I expect similar stability with the MT6000?
It removes the stock OS, but leaves the stock U-Boot. This is a good thing because the stock U-Boot has some very good recovery features that make the unit (almost) unbrickable.
Factory image file removes the stock U-Boot, which is neither recommended nor useful. GL-Inet also have a Github repository of the installed U-Boot code for those worried about using Chinese code.

The Gl-Inet software is based on OpenWRT, there is a high degree of compatibility. It has to be easier doing a sysupgrade on a OpenWRT based system, than installing a factory image on a foreign based system.
The Gl-Inet software is very attractive and easy to use, but you should upgrade to OpenWRT current software for full features and more up to date.
