Yes, that should work. Obviously you also need to link the new network interface to the radio, set up the SSID and password for the wifi, enable the radio. Don't forget that you'll probably also want an DHCP server on that network.

This is the link you need to set up Surfshark Wireguard on Openwrt. You linked to their VPN product, not their Wireguard product.

You might find some setup hints here as well.
