I bought this router WE1326.
I cannot find an APN like on any mobile device you have always the proxy and port comes under the APN. see a screenshot attached.
Could you please help with how can I add it? or if you can create a script in OpenWRT.

you're probably referring to android APN screen as it seems your post is missing the screenshot.
First of all Android and Openwrt are different OSs so it works differently.
To achieve the same functionality as in Android APN proxy you'll need to install additional packages via opkg like redsocks and set it up according to official docs https://github.com/darkk/redsocks
