So, you are intercepting DNS traffic.
That explains previous behavior.
Try to use Google DNS:

I rebuilt the router and reinstalled everything and now it works as expected. No more complaints about "unable to join Apex Legends" games from my kid.
After the reinstall the only thing that appeared different is WAN6 is no longer a VLAN assigned to eth1.1
It is currently eth1 for WAN and WAN6
Meh, not very satisfactory in terms of figuring out what was wrong, but hey glad it works now!
