I've got the Cudy WR3000s with the MT7981BA running 24.10.1.
It is said on the forum that MediaTek devices have hardware acceleration support. Do I need to toggle it? Is it the "Routing/NAT Offloading" setting in Firewall? If this is the correct place, what should choose there, software or hardware?

You found the correct place.
Read 2nd to last paragraph https://openwrt.org/docs/guide-user/perf_and_log/flow_offloading before enabling hardware offload.
Your device should be fine with gigE wire speed nat without ofloads.
Lets see what problem you are faciing
disable that offload, connect w!ired,
save link to the https://www.waveform.com/tools/bufferbloat test result
enable sw offload, add next result
enable hw offload ..
Do same in 5ghz wifi
You can post six links, or put up+down and idle-latencty+max(up-latency,down-latency) in a spreadsheet and tell what you think is a problem.
