Is there anything like ZTE MU5001 that could be set up with openwrt?

The better approach would be for you to provide a list of requirements and nice-to-haves. We have no idea what you need in a travel router. The ZTE device you mention may have features you don't actually need/want and/or other device may be missing key capabilities you will be using.

The MU5001 is really powerful and does most of the job, I somehow feel disabled when I can’t push some more capacity into this magic brick. Although I use a second router to manage the whole network, I am primarily unable to reduce a hop by putting into Bridge mode. Perhaps a list of additional Features I would really appreciate and skip a second router :

  1. Bridge mode
  2. Vo5G -
  3. SIP
  4. WireGuard Server/Client
  5. ZeroTier

That’s atleast what I could think of to get the conversation started.

It is mostly moot because that device is not supported by Openwrt.

What are we missing or feeling short of from the HW specs ?

Well, support currently doesn’t exist for this device. The reasons?? I’m not sure. But the first thing that is necessary is to find out if it is possible to support in the first place. To do this, follow these instructions:

There is no open source for SoCs which include an LTE modem on the chip. Devices like this one which run everything in one SoC are not supportable. The OpenWrt models with LTE have a separate card or chip for the modem, which continues to run its separate closed source firmware.

Most of the MiFi devices like this one have the option to turn off WiFi and USB tether instead. This can improve performance when building a larger network with your own router.

Also see if your ISP offers IPv6 and start using it if they do. It is an integral part of LTE and if properly implemented by the ISP should be higher performance and no NAT.
