Hello,
Wifi with the Mac-filter set to allow-list and the ESSID set to hidden doesn't allow devices to connect. I've tried with a Mac and iPad.
Many different tested configs didn't work with the above being true.

Get over it, modern operating systems do wifi scans using random MAC
This is true, though devices can be set to use a stable MAC, and since I control the network this can be used.

Use serious authentication to protect the network, like EAP, 1st connection exposes hidden network name and allowed MAC to a passive observer.

Because time passed and all clients scan wifi using random mac.
