I have an older E3000 and back in 2013 I flashed it with DD-WRT firmware.
Can I now install OpenWRT firmware on this router? If so, how would I do that?

Current image, once you understand the caveats around Broadcom wireless support, should be under

Technically speaking you can, but the wireless support for n-phy broadcom softmac wireless cards (such as yours) is very bad, I'd suggest to look for a better supported/ modern device instead (especially the used market has decent devices for a song).

what used devices should I start looking for. I'm looking at a solution to be a wireless Client or Client bridge
I'm not sure where you're located, but the GL.iNet AR300M-Lite is a great unit for that at US$18 through Amazon (US) or direct. I have one and am very impressed by its performance for the price, size, power consumption, build quality, and support from the OEM. It is 2.4 GHz only with a single Ethernet port, if that will meet your needs.
Where I am, Archer C7 v2 units are being dumped as users move to 500-1000 mbps lines. They can be purchased here for US$30-40 and have good wireless performance on both the 2.4 and 5 GHz bands, with 802.11ac available.

The GL.iNET AR300M-Lite looks very interesting. It seems to be able to tether via USB to my Galaxy S8 Smartphone. I'm guessing I could then connect the ARM300M via RJ45 to my old E3000 WAN to serve as NAT router for local wireless and wired devices.
