If you have seen the netduma r2 router based on openwrt firmware it has built in graphic ping under load measurement option which got my attention. 
Could an casual user replicate this with an openwrt package?

Constant ping test, not quite identical to your example
Thank you, I have installed the package, but further set-up seems quiet complicated. What should be my next step within luci interface to achieve the ping test graph

I think that you may need to install the collectd-mod-ping module (as it is not included in the stats by default)
In the stats config you can then select the site(s) to ping.
