I am looking to build a simple wireless bridge between buildings and I was wondering if 802.11s was the right answer. It will just be an antenna on each side pointed to the other building.
Why two on each side? Two bands/channels?
Generally, for a single point to point connection, WDS might be simpler and more "appropriate".
Having said that, I do something similar to what you're proposing albeit within a single house, using 802.11s. It works okay.
Depending on the network topology you use for layer 3 (IP addressing and routing), more interesting problems may arise if units on either side of the link reboot. But I think that'll be a possibility whether you use 802.11s or WDS.
I messed up my wording
