You probably shouldn't delete/change the root user, but you might be able to add another one by editing /etc/passwd

If you consider yourself a beginner, my two cents piece of advice is that you should stay away from unnecessary but complex and dangerous modifications.

That "root" user is only used when you enter through SSH, it's name has no effect on the daily usage of the router. There is no provision in the web interface to change it, and a wrong modification will lock you out of the device.
