Are there any special configurations for the R7800 that help in getting as much speed toward 1Gbps as possible for cable connections to the router?
I've read that some people can get about 850 Mbps with R7800. What configs will help me do that?
Most of these config recommendations apply to normal OpenWrt. CPU performance governor, irqbalance, packet steering, and software offloading will get you ~700mbps routing speed (rarely low 800mbps under ideal conditions), halfway down this post I have recommended config options:

If you have a gigabit WAN connection and want true full gig rate you need NSS hardware offloading. Feel free to try one of my builds:
Have Master, 23.05, and 22.03 builds for ipq806x devices with hardware offloading using the two NSS cores. All Master and 23.05 R7800 builds are tested before positing (router boots + wifi works). I don't own a C2600, EA7500v1, EA8500, G10, NBG6817, R7500v1, R7500v2, or d7800 (builds for these are untested - make sure you known how to tftp if you get in trouble)
