I've managed to get all the things I needed to work, guest and iot wi-fi networks across both dumb AP's. Now I need to customize this script to run directly on AP1 and place the QR code directly in "/www". If anyone knows of a similar solution that works immediately on OWRT (ash instead of bash), I would be very grateful.
