I have a Brother multifunction laser printer, scanner, and copier.

My device assigns its own IP address, and can be seen in the Brother admin app.

Take a look in your admin app and see if your device is showing an IP.

I assigned that IP as a static address in my OpenWrt router, and have had no issues scanning.

Ah, I missed the that OP's DCP7055 printer should indeed have a LAN port, which should provide the golden ticket here, as it means OpenWrt doesn't need to be involved with this device at all (other than providing it access to the network).

After a lot of tries, I gave up to find a solution.

I was thinking that with Openwrt usbip packages it could be done but I am not skilled enough to find a solution.
I was thinking to use a usb/ethernet adapter, they are not expensive now. Does someone try it? What model?
