ASUS RT-AX88U router as a futureproof, ax solution. Is there any chance that OpenWRT community starts supporting this powerful device in the near future?

That's virtually impossible, it's an all Broadcom (BCM49408 SOC, BCM43684 WLAN) design, for which no wireless drivers exist.

If you're looking for 802.11ax devices with a reasonable expectation of future OpenWrt support, you should consider QCA-Atheros instead (partial ipq8074 SOC support has been mainline for around 2 years, ath11k wireless drivers will be part of kernel v5.6). That isn't a guarantee either, nor will they be supported immediately, but chances aren't too bad.

Where are all the 802.11AX network adapters?

ath11k is being merged for kernel v5.6 (it's already part of net-next for v5.6), so you can expect that to arrive in due time (OpenWrt uses backports for wireless, so it doesn't depend on kernel v5.6 to run on the host, but will get it earlier). However the ath11k supported WLAN cards (QCN5024, QCN5054, QCN5124, QCN5154) are so far only found on devices with an IPQ807x SOC, which are generally speaking quite far at the upper end of the price spectrum, limiting availability to potential developer…
