Any way to turn this shadowsocks tunneling on and off without having to totally rewrite the config of my router?
I need to be able to turn the tunneling off so I can keep my connection going through my router
when I need to connect directly to my phone's built-in hotspot software.
Because my laptop's wifi is s***, and also so I can keep myvr headset on a gigabit/5ghz connection to my laptop.

You should be able to disable it using the disabled flag (true or false). If you have the shadow socks LuCI app installed, it has a checkbox to enable/disable it. Otherwise you can us UCI on the CLI or edit the entry with this line:
option disabled 'true'
