Advice needed please

Hi, I am a new user to OpenWRT and I'm looking for advice on how best (and how to) configure OpenWRT in a Proxmox VM. My equipment is:
5G model (bespoke case with Quectel RM520N-GL module EE sim
4 port Topton mini pc (N100 processor 16GB RAM 1512GB NVME 11TB SSD
Unifi 6A wireless access point
8 port managed switch (2.5GB ports & 1 10GB port unused)
N.B. I am considering buying a Unifi Cloud Gateway Ultra to provide multiple SSID UNLESS OpenWRT could provide the same functionaily

Currently the 5G modem is connected to the 4 port mini pc running proxmox with 1 virtual bridge vmbr0 assigned to all 4 ports, enp1s0...enp4s0 but I don't think this correct at all. As my goal is to run a firewall as a vm too. e.g. Sophos, PFSense, OpenSense etc..., I would really appreciate if someone could provide configuration settings for both the virtual bridges I need to create in Proxmox and how to configure the interfaces in OpenWRT.

Who dials 5G connection?

There is no dialling involved. The 5G sim was activated in a phone first. Then it is used in the external box and after issuing a few ATA commands a permanent internet link is established. I call the device a modem as there is no ui to apply any settings like a router. Proxmox provides DNS and DHCP services.

In this case you do not need any extra VMs for NAT?
You can add adblock/ids VMs, not imperatively OpenWRT.
Keep it simple?
